This sparkling wine is made from 33% Colombard , 33% Chenin Blanc and 33% Sauvignon Blanc. Red apple fruit aromas on the nose with an explosion of fine bubbles with a crisp refreshing finish.
After crushing , the grapes were pressed softly and left to settle for 24 hours. It was racked and inoculated with different yeast strains and fermented until dry in stainless steel tanks. The wine was blended, stabilized and sterile filtered prior to bottling.
