Grape: 100% Pinot Nero from organically grown grapes. Vineyard: West-facing vineyard at an altitude between 250 and 300 metres above sea level. Wine making: Ripe grapes are picked by hand in boxes and vinified in rosé, that is a very short maceration of peels in the must. This one is fermented at a controlled temperature of 16°-18°C in stainless steel tanks. The wine, after the winter rest is re-fermented in special steel containers in order to take froth and, once made sparkling, bottled in cold. Wine: Nice rosy in colour. A fruity and fragrant bouquet with hints of marasca. On the palate is crisp, slightly sour with a delicate sweet vein that balances the taste. Pairings: Cold cuts and sausages, pasta with strong taste sauces.
