Tasting Notes: Full round and assertive, generously laced with dark ripe fruit. There are hints of earth, and spices
on the palate. The structure is firm and masculine with ample tannins to create excellent mouth feel and carry the
flavour all the way to the back of the tongue.
Vinification: There are 5 stages in this process, pre-ferment cold soak (6-8 days), primary fermentation (8-10 days), post ferment maceration (7-14 days), Malolactic fermentation (approx 14 days), and barrel maturation (a further 9 months). All these stages are conducted in the Big Barrels making this a unique wine. The Big Barrel Method: Acting as both a fermentation vessel and storage vessel these 900Lt barrels provide a unique and sophisticated
environment for the production of Pinot Noir. They impart a high degree of complexity, facilitating seamless integration of the oak and generating excellent structure. The process allows the winemaker a great deal of flexibility in fermentation management and ensures the fruit is protected from rough handling.

| O Winnicy | ""Great wines are made in the vineyard and great winemakers embrace this principle as the foundation upon which their craft is built" - it´s a text from the homepage of Bird. Since entering the wine industry as a school boy in 1979, Steve Bird has adhered devoutly to this philosophy. It is a belief that has served him well over the years, bringing many successes. The most notable was the stunning success of his former business Thornbury Wines, recently sold to Villa Maria Wine Group. Steve spent almost a decade developing Thornbury, driven by his uncompromising attitude toward quality. This philosophy and attitude toward quality are the most valuable assets that Steve brings with him to this new venture. Steve has dedicated all his working life to the New Zealand Wine Industry and now he and his wife Caroline are delighted to be able to present a range of fine wines that they believe epitomise the best that Marlborough has to offer the world." |
